Why not nosh on some stuffed persimmons this weekend? These are easy to prepare and a fast, fun snack!

Dressing Ingredients

avocado oil

125 ml avocado oil

balsamic vinegar

30 ml balsamic or apple cider vinegar

agave

15 ml agave nectar

salt

pinch of sea salt

Filling Ingredients

kale

500 ml chopped kale

avocado

1/2 avocado

pumpkin seeds

60 ml pumpkin seeds

celery

60 ml chopped celery

cranberries

60 ml chopped dried cranberries

Directions

  • In a Personal Blender, blend only the dressing ingredients.
  • Toss the blended dressing and filling ingredients together.
  • Cut persimmons in half and stuff with the filling mixture.
